I am very picky about food and I can tell this chef knows what he is doing.
Ceviche (perico) and clams were very delicious . The fish (saltado) is fried only a minute in high temperature and retain all the juices and flavor. the amount of spices is precise nothing overcome the other.
Best Peruvian ingredients combined with Japanese perfection.
