Did anybody try "Las Tinajas"? It's my favorite at the moment. Very good delivery, too. I like Don Bellisario too as they offer nice side dishes for your "pollo a la brasa" and not only the famous "papas fritas"

Great taste, but TINY portions of chicken. They got them when they were young, that´s for sure.

This sunday is National Pollo a la Brasa day! or how I prefer to call it: Pollo alo spiedo 8)

Sadly I came with this awful news, from now on I will only eat where they use gas ovens. Enjoy with responsibility.

Not at any of those mcdonaldesque chains sorry to say but I absolutely refuse to divulge the name or location of the best pollo a la brasa in the entire country as the last time I did they raised the price by 50%....

My Uncles restaurant in Curawasi does a fantastic pollo but my favorite is close to plaza de armas in Lima Center, its not a chain and I will not say anything more. The pollo is divine falling off the bone with perfectly crispy but juicy skin, the best papa fritas and ensalada as well. But the Ultimate is the AJI sauce which I have been getting closer and closer to replicating at home! Same pit master has been at this place for a long time. He is there everyday all day and is legendary!

I have to agree that it's all about the aji sauce! There's generally not too much difference between the chicken from each of the restaurants but Pardos dips are the best. Pappas is also up there as well. They have some pretty good chimichuri for a place that isn't a proper steak house!

Yeah, having that special sauce is always key.
I have a secret sauce that I use to marinate meat but if I told you, I'd have to kill you. Lol!

Is anyone willing to share their success with the Pardos aji sauce recipe? I have been trying to duplicate the Pardos' sauce for 20 years, but I am not yet successful. I try recipes from a google search, but it is never the same.....

They list the ingredients in their aji on the package.

got to agree that most of the chicken tastes the same. the success is the flavor of the cremas. having said that, i would like to see some places get a little more creative (and larger) salads, and less fries.
every place has it's own spirit. you just need to tune into it.

Yeah the salads aren't usually too great. It would be nice to have some lemon, lime or orange wedges as part of the salad dish so you could squeeze then over the chicken like in mediterranean food.

Usually there's not too much difference between the places and all seem to copy the Pardos salsas but i did like Pappas cos they tried to be difference a little bit with the sauces.

BEST POLLO FALLING OFF THE BONE....delicious crispy skin

BEST PAPA FRITAS

BEST ENSALADA

BEST AJI SALSA

Don't tell ANYONE! Seriously last time I spread the word they jacked up the prices x2! Seriously, do not tell a soul!

Dude that minds the birds has been there since the beginning of time itself and always laughs when he sees me coming back in the door....they use real wood not charcoal too. Being a Kansas City Pit Master I can tell the difference.
