Not exclusive to Lima, it also features restaurants from the provinces, including my own vegan sushi place el buda profano

Wow, I never knew there were so many vegetarian options.
Are these restaurants mostly geared to expats?
Generalization here but the Peruvians I know are all carnivores.

I am the only meat eater in our family and can say that they are able to adapt most things to vegetarian. Rice is the mainstay of course but veggies are abundant especially in the markets. The best thing about the markets is that everyone buys fresh daily. The only times I get sick in Peru it has been at a tourist bar and chains like norky's. I dont go to chains anymore except BK and Bembo in Miraflores after long nights out at the disco's.

I visited several of the places listed in Lima. Most of the other customers were Peruvians. My own place -vegan sushi bar in Arequipa- gets a 50/50 mix of travelers and locals. Not many expats. Also here in Arequipa there are dozens of local vegetarian restaurants offering a set lunch for around S/10. They are geared towards Peruvians, and Peruvians fill them up at lunch time. Very very few gringos.

So yeah, "Peruvians are all carnivores" is a generalization. A big one.
