I've always seen it as culantro in Peru. In TX it isn't coriander but cilantro.. Funny world.

Just recently I got into a friendly argument with the produce mgr at a grocery store in S Florida. I came across a bunch of wide/long green leaves tagged as CULANTRO. I said to the manager that I knew culantro and that bunch was no culantro, I also said culantro was also known as cilantro. The guy was polite and in no uncertain terms went on to explain and showed me that culantro and cilantro are two different items. I went home pleased that at my age I had learned something new. I grew up in Peru calling CULANTRO to something that is known as CILANTRO in the US and Central America. I dunno where the mixed up happened.

I need HELP I like to bake BUT I need to know when to use Flour prepared and flower sin prepared. Could someone please help me out. So far I have been using sin prepared for pizza, corn cake. Flour prepared for cake what else info can you offer.
What flour do I use for bread. Anyone know where I can find RYE flour and WHOLE WHEAT flour.
How come when I use what they call intergral flour it turns out light not dark like when you buy something in a store? ANY IDEAS.

Thyme is tomillo.
Leeks are poro. (not technically a spice, i guess, but they are used to flavor food :) )

Thyme has been added and I also want to thank all of you for your feedback on this. I will be adding Leeks when I do a vegetable and fruit list. While not actually considered a spice I do use it for flavoring and also in my Chinese Stir Fry instead of Green Onions.

A couple of additions:
Tumeric = cúrcuma
Sesame = anjonjolí
Ginger is frequently seen as Kion instead of Jengibre (though I grew up calling it jengibre)
Clove can be Clavo or Clavo de Oro (to distinguish it from a nail)
Pink/red peppercorns - Molle. Molle trees are very common on the coast, but the seeds today are not used much. They are delicious ground up and used to spice meats, pasta, rice, whatever.
Chile/chile is aji and there are [u]many[u] varieties.
Aji Panca is the dried red chile that you can sometimes get in powdered or paste form
Most common Chiles in the markets:
Aji Amarillo, the long orange chile. If you cut out the seeds and veins it tends to be relatively mild
Rocoto: round, dark red, like a compact sweet red pepper, but much hotter. They vary in heat, avoid seeds and veins
Arnaucho: small peppers, yellow, purple, red, with a distinctive flavor, tend to be the hottest that are commonly found in markets. Often an ingredient in Ceviche.
Pipi de Mono, or monkey's penis, can be found occasionally. They are tiny, deep purple to red, and hotter than hell. They get their delightful name from their diminutive size and shape.
I've discovered that there are bottled versions of salsas made from these and other chiles now in most of the markets.
The Azafrán I have found here bears very little resemblance to real saffron.
The ladies selling blended spices in the markets all have their own mixes and will tell you many ways to use each. I find that if you fry them up before using, they are quite safe and tasty.
Huacatay is an herb that is commonly used to give the distinctive flavor in a Pachamanca. It belongs to the Asteracea family, and has no English equivalent, that I know of.
It is all great fun exploring.

I have never seen cardamom pods in Lima, even at the Surquillo Market. I bring mine from the US.

I think there's a difference between making an honest mistake where one is willing to correct and/or update their information and telling an outright falsehood, spreading lies, etc. where one is unwilling to correct their misinformation or even acknowledge the evidence put before them. For instance, we've yet to hear anymore about the 7 year old hit men. No links to credible media backing up this, or many other stories. No photos of a "so clean and safe" Mexico City, etc..

I think a lot of people are fed up with the blatant lies and false information you state on an almost daily basis. What's the purpose? Is it just to get attention? To keep the pot stirred and provoke emotional responses out of other members? Do you get a kick out of people having to correct your obvious falsehoods or what could be considered lies? Is your self opinion so low that it doesn't bother you that you're considered to be the member with the absolute lowest credibility? What's wrong with posting accurate, fact based posts? Do you have something against actually helping out fellow expats by providing accurate information? You seem like a smart guy, so why do you post such nonsense? Why are you unwilling or unable the majority of time to provide a source to prove or give any credibility to what you say? Why can't you even address the fact that people are calling you out on your falsehoods? People have differences of opinion, which is fine and makes conversation interesting, but there's a difference between expressing an opinion differing from someone else's and telling outright lies and spreading misinformation (that people new to Peru or thinking of moving here might take seriously as fact, not knowing any better or your reputation for low credibility). Did you not get enough attention as a child and are making up for it now?

Some of your stories are entertaining though. Whenever you mention your story of S/. 150 hitmen I picture a Peruvian 7 year old Joe Pesci saying "Who the [email protected]# cares? I'll dig the [email protected]#in' hole, I don't give a [email protected]#! What is it, the first hole I dug? First time I dug a hole, I'll dig a [email protected]#in' hole. Well, where are the shovels?" in the desert outside of Lima, wondering how he and the body of his victim even got out there in the first place. Funny stuff.

We allready did and some of YOUR comments and a topic has been removed.

I have been giving here great advice to people about finding reasonably priced accomodation, where to shop for products and how to save a lot of money on travelling. Including on how easily to save up to 75% on international airfares with TACA/AVIANCA.

Several people here on expatperu, I met in person and are good friends.

I never suggested people to spend a lot of money at a lawyer if they are missing a key worth 2 soles and never promoted ridiculously overpriced hostels like the Marriot Marquis or a cruise that even doesn't have a port of call in Peru.

You just started up 2 new topics that are interesting about Why in Peru and the Thanksgiving party. Stick to that and keep up the good work.

Hi all,

I'm planning to move to Lima next June (2016) and open a restaurant. I'm sure I'll be able to cook with whatever I can find, but it would be nice to know: how easy is it to find all of these spices in Lima, how expensive are they, can I ship them from the US and are there any taxes/fees involved in doing so?

Any info would be helpful, thanks.

you can find most spices fairly easy and inexpensive here. the ones that are imported though are more costly. what type restaurant are you planning?
every place has it's own spirit. you just need to tune into it.

They are everywhere, from tiny street markets to supermarkets and hipermarkets, there are many local brands, organic artesanal ones too, also Badia brand wich is very well know in the world. We also have Makro stores here where you can find cooking ware and gastronomic ingredients.
