I am very picky about food and I can tell this chef knows what he is doing.
Ceviche (perico) and clams were very delicious . The fish (saltado) is fried only a minute in high temperature and retain all the juices and flavor. the amount of spices is precise nothing overcome the other.
Best Peruvian ingredients combined with Japanese perfection.
Best restaurant in Peru. I like
surquillo chicharron pescado (fried fish) which is yummy and delicious.
