I think you'll be hard pressed to find many countries that does dipping sauces as well as Peru. There's nothing better than getting a good bit of steak, pork or pollo a la brasa with those dipping sauces lie Salsa de Aji, Huancaina, Peruvian mayo and chimichurri! Huancaina can be really hit and miss sometimes. It can be the best sauce you've ever had when it's done right but the most dullest when not, which is usually when it's used to cover pasta or potatos. It tends to have a lot more flavour when it's just a dip.
The problem is where to get a good steak or roast beef & not some tough as shoe leather horse meat to use the dips on.
