Photo looks good, thanks for the tip on the cheese. Personally, I don't think that you can beat a pizza prepared with Emmental as your base cheese and Parmesan sprinkled on top of the other ingredients. OK, so it's not cheap, but even so it's cheaper than what Pizza Hut charge for their generic pizz...

Thanks for the tip about the terracota saucer, does it tolerate the heat of the oven OK ? No cracks ? Whilst we're on the subject of pizzas, has anyone found a decent Peruvian cheese to use ? I've tried quite a few over the years and most produce a lot of grease when melted and the taste isn't great...

Forget about salmon. Wild salmon stocks have been so severely depleted that almost all of the salmon in the shops is from a filthy fish farm. Some wise words here. I agree that the flour isn't ideal, bread that should be soft and elastic turns out to be regular weight and density. Anyone used a decent light flour for something like indian naan bread ?Also, the yeast does next to nothing in most cases. As the economy flourishes we can hope...

Well said Bob, a good two cents worth. Any idea where I can get a thermometer for kitchen purposes here ? i.e. one of those nice western gadgets that let's you measure the temperature of a joint of meat whilst it's cooking.

Food preparation standards and food hygiene in general here are not the same as in the US or Europe, that's for sure. My local bodega here in Trujillo for example has pieces of raw chicken sitting around on exposed counters waiting for customers to choose their cut, the air temperature is 28 degrees...

Another Scot living in Trujillo. Have been here for about 8 years now running an Internet cafe and computer business with my wife.
